Welcome to the second week of my @whatsdadeating weekly email series. Honestly, I didn’t know what to expect from the first week, but you guys are amazing - I was more than blown away by your responses.
So many of you hit reply & shared your journey with me. I wanted to share a few here today because I know this thinking resonates with many of you.
‘I’m so excited about this. I struggle with coming up with meal plans. I love to cook, but planning healthy meals that are low carb is overwhelming to me. I know what to eat, but I get stuck in a rut and then eventually burn out. I’ve even looked online for cookbooks that have monthly meal plans and I can’t seem to find any. I can’t wait to try these recipes and make all of these meals. This takes the guess work out and makes my life much easier’

What’s For Dinner? Paleo Sloppy Joes
I never really ate Sloppy Joe’s as a kid, but as an adult, there is something that reminds me of my childhood in the late 1980’s & 90’s. (God, I feel old just writing that)
For me, this dish hits because of its flavor pallette. The sweetness of the sauce, the tanginess of the tomatoes, and the crunch of the vegetables, when combined, bring back that comfort food taste we all love.
This week, I’m eating it over homemade steak fries rather than on a traditional bun, as it gives me a little bit more of a caloric-dense side dish while avoiding processed grains and gluten. If the fries aren’t for you, this dish goes great on a hamburger bun, over rice, or can stand alone by itself.
What’s For Dinner? Eggroll in a bowl
If you know me in real life, you’d know how much I LOVE Chinese food. You’d also know how I hate how Chinese food makes me feel after eating it.
This recipe gives you all of the flavors of your favorite takeout without the MSG, without the bloating, and the gnarly food coma.
I first tried this recipe when doing a Whole30 years ago, and it’s stayed in my diet because it’s clean, full of vegetables, has minimal carbs, and is full of added flavor.
For Dessert: Protein-packed Chocolate Peanut Butter Easter Eggs
Easter is less than two weeks ago & the old Dan would be binging on everything chocolate right now. Cadbury Eggs, Peeps, & Reese’s Eggs.
This is one of my favorite recipes—a copycat high-protein, no-added-sugar version of the famous Reese’s Eggs.
They have the same great taste, without any of the bad stuff. (and each egg packs over 10 grams of protein, so you can eat these without the guilt!)
So, that cookbook?
The short answer is that it’s STILL not ready yet. Part of that is that writing a cookbook is much harder than I thought. The other part is that I’m a perfectionist, and I don’t want to create something I don’t love.
Here’s what I do know…
I’m calling it ‘Sweet Treats,’ and it’s going to have 25 of my favorite healthy desserts—baked goods, ice cream, and snacks. All of them are higher in protein and lower in calories and still taste like the comfort foods that we all love.
I’m probably going to release it as a digital download first - with a real physical book to come in the future (because this is also harder than I expected…)
Anyway, I’m going to sell them for $40, but I want to offer them at half-price to anyone who is subscribed to these newsletters (you’re in!!).
