6. Bring It Together: Dump the cooked chicken, eggplant, and onions back into the pan. Toss in a massive handful of fresh Thai basil leaves. Stir everything together until the sauce coats every piece and the basil wilts.
7. Serve & Enjoy: Scoop over a warm bed of jasmine rice, garnish with extra fresh basil, and enjoy!
